Culinarily, the restaurant at Dragsholm Castle aims at becoming the best restaurant in Scandinavia by offering an exceptional experience. “We aim at becoming the best restaurant in Scandinavia. Not only taste-wise but also by offering special experiences to give diners a better knowledge of fresh Nordic ingredients”.
“Our chef works closely with the Michelin restaurant Noma with the aim of creating a new profile for the restaurant at Dragsholm based on the Scandinavian culinary heritage and the locally grown products”,says Mads Bøttger.
The restaurant works to the philosophy “from soil to table”. This has been chosen because of Dragsholm Castle’s unique position virtually far from the madding crowd and very close to where the products are grown. The idea is to give the guests the possibility of being part of the culinary process by helping the Chef collect the vegetables. Each morning the Chef rides his tractor into the field to harvest organic vegetables that he subsequently prepares and serves for dinner.
